Tonight I made a Chickpea and Beef Red Curry. Rehydrated some more Chiles, Roasted some
Tomatoes, Onions, Garlic, and Red Peppers. Combined with the rehydrated Chiles and blended
it all together. Added it into the Pan with some Ground Brisket, and holy crap!
Lots of Lime. Threw in some Kale and Basil. Added some more heat with Cayenne and Crushed
Red Pepper and it turned into one of the best things I have made recently.

I’ve been eating roast beef sandwiches for dinner the last two nights! This stuff is AMAZING! This was her first attempt at it, she’s gotta use more onion in the future but man, when you bite into that ring of caramelized onion in the bread, along with the horseradish then get the asiago at the end……fuckin’ hell.
