I'll probably roast them with some Garlic and Onions and make some kind of Green Sauce. :idk

Tomorrow! :LOL:

Tonight I made a Chickpea and Beef Red Curry. Rehydrated some more Chiles, Roasted some
Tomatoes, Onions, Garlic, and Red Peppers. Combined with the rehydrated Chiles and blended
it all together. Added it into the Pan with some Ground Brisket, and holy crap! :banana

Lots of Lime. Threw in some Kale and Basil. Added some more heat with Cayenne and Crushed
Red Pepper and it turned into one of the best things I have made recently. :chef

I am definitely going to make my own Curry Pastes/Blends from now on. :banana

Pretty sure an even better combination would have been Chickpeas and Lamb,
but I didn't have any Lamb on hand. I was going to toss in some Coconut Milk
to temper the spice down a bit, but all the fat from the Brisket kind of did that
for me.

Hahaha! Nah! I am far more diverse than she ever was. :rofl

Our access to quality ingredients here as taken a quantum leap in the past 5 years or so. Been massive. Means I can chase my curiousity. I like experimenting and learning new things. I am not a, "We have Spaghetti every Tuesday, and Tacos every Thursday kind of guy." :idk

I do most of this kind of stuff on the weekends when I am home all day. There ain't a fucking soul in this world who is going to do any of this for me---so onward!! :cheers :chef

3rd day eating this Elote Corn Chowder. Yum.

Basically Potatoes, Corn, Cream, Butter, Roasted Poblanos, Onions, Garlic, Lime, and Chiles.

I threw some Cotija Cheese, Crema, Tajin, and Cilantro on before eating. :banana

The Green Blob is a Cilantro-Lime Sauce I keep on hand. I would use Frozen Corn next time. I used
Corn on the Cob from Claremont, Florida and it was a bit dry and depleted after walking north a
thousand-plus miles. :lol

I need to get back into the chickpea recipes. During the vegan years I was eating about 3-4 cans of chickpeas a week and so many good Indian dishes I’ve since abandoned! I have a big ass bag of jasmine rice waiting for it!
 
A woman I’ve been talking to at the dog park started making artisan sourdough bread as a little side hustle and her pics looked pretty good so I bought a couple off her-

Caramelized onion and Asiago-

I’ve been eating roast beef sandwiches for dinner the last two nights! This stuff is AMAZING! This was her first attempt at it, she’s gotta use more onion in the future but man, when you bite into that ring of caramelized onion in the bread, along with the horseradish then get the asiago at the end……fuckin’ hell.

And this chocolate chip cinnamon one I brought into work today for everyone to munch on-

I spread some Nutella on that and have been giving myself diabetes for the last 3 hours.
