I did find an whole slab Uncured Pork Belly that I did in the Smoker
while we were cut off from Civilization. Being cut off is not always a
bad thing. :LOL:

I have been hunting for a Pork Belly someone had not turned into Bacon
yet, and finally found some. It's better than I could have imagined. Very
impressed. Oooppps.... there goes your LDL! :banana
 
100%!!! I've done some Whole Chickens this way on the Grill, but never smoked
a Spatchcocked Bird. :clint

One of the most wonderful things about a Costco opening near me was discovering that they carry whole (skinless) uncured pork bellies! I do cure a lot of them to make my own bacon, but smoked pork belly "burnt ends", pork belly bahn mi, pork belly ramen... Oh yeah!

My journey is just getting started. :banana

For years I have asked every Butcher within a 100 mile radius for whole slab, uncured Belly. No
idea why it changed now. They used to tell me it was more profitable to turn it into Bacon. :unsure:

I feel like I may need to pop a few in the Freezer before they are unavailable in this area again.
 
I want to try Braising some for Ramen. Have you done that, by chance, @Chocol8 ?

Not braised, I do it sous vide for 24-48 hours and then sear it with a weed burner torch. As far as finding it, Costco helped a lot, but an alternative source would be an asian grocery store if you have any in range.

Where are you located? The UP?
 
Yeah, Costco is not an option here. I have checked in and stopped into pretty much every Butcher
Shop/Meat Market from Alpena to Petosky.

Local Grocer here buys a lot of Meat locally from the Amish and butchers it in house. I found it there,
and they still have it for $3.99/lb. :banana:banana:pickle:pickle

Best $20-$30 I have spent in some time. :LOL:
 
Getting ready for the bikini season I have been heavy on the salads lately, and I've found that I can eat taco salad and Greek salad a lot without getting sick of it.

I keep the taco salad super simple:
cherry tomatoes (130g)
1 red bell pepper
crispy lettuce
1 peeled cucumber, about Mandingo sized
1 red onion
1 lime
pickled jalapeños
fresh cilantro
400g lean ground beef+ taco spice mix
Salt, pepper and ground thai chili (HOT)

I add a couple tablespoons of 17% fat sour cream when eating as "dressing" and a little bit of salsa sometimes.

The above give me two dinners, and are pretty damn high in volume so I get pretty stuffed, doesn't really feel like a diet meal at all.
Fresh veggies are good!

Off season I'll add some corn and have some nacho chips on the side. Yum

I've made a variation of that every night for the past 3 nights using Smoked Turkey Breast 2x and Ground Beef 1 time. :chef

Also gotten into making my own Ranch Dressing. I love Salads. I am a big Food Diversity guy, and not much out there
is more diverse on a plate that a Big Ass Salad.

Tonight’s salad came out super.
Lettuce, tomatoes, red onions, cucumber, feta, grilled chicken and radishes.
Only dressing was about a tablespoon of red vinegar and olive oil , splash of Thai soy sauce.
Damn the feta and radishes really did the trick! :chef
