Definitely a funky tongue feel of some kind. Almost like I burnt it on
something.... but didn't. Also, this chronic dry mouth. WTF is that?

Experimented with some garam masala and came up with a cookie recipe last night (I also bake). If you like ginger snaps, snickerdoodles, and Indian food, you’d probably like them. Let me know if you’d like the recipe.

What's the texture like?
Similar to a snickerdoodle or sugar cookie. I only used an egg yolk so it’s more chewy than crispy.

I usually do half batches for dialing in a recipe. So just double it for a dozen:

4 tbs (half-stick) melted butter
52.5g brown sugar
17.5g granulated sugar
1 egg yolk
1/2 tsp vanilla extract
1/2 tsp water
76g flour
1 tsp garam masala
1/4 tsp baking soda
1/8 tsp salt

  1. Preheat oven to 350F (176C)
  2. Mix melted butter, sugar, vanilla extract, egg yolk, and water thoroughly
  3. Add dry ingredients and mix thoroughly
  4. Separate into six equal balls and roll in granulated sugar
  5. Bake 350F (176C) for 10-11 minutes
  6. Leave on sheet tray for 5 minutes before moving to cooling rack
 
Thanks, might give that a try, even if I feel like wasting the delicious garam masala I bought directly in Mumbai when abusing it for something sweet...

I buy it in bulk on Amazon, so it’s probably not as fresh as the stuff directly from India.

One of these days I’m going to make my own from bulk spices.

I think the main difference is rather that there's soooo many variations of all those spice mixtures. The shop I bought it in had like around 50 different curry variations and at least 20-30 garam masala mixtures. And then whatever else that I didn't really understand.

One of these days I’m going to make my own from bulk spices.

Only ever did that with Ras al Hanout 2 times (kinda north african but it's not too far away from some indian spice mixtures), was amazing, but either you buy a lot of individual spices so you'll never be able to use it all up or you're buying smaller tranches and it's getting quite expensive. Fortunately we've got some nice turkish supermarkets all over the place here and at least the most common oriental spice mixtures are available in some variations and at decent prices (still like 10 x as expensive as in India).

Oh yeah. Every single mix I’ve had is different as everyone has their own interpretation. The stuff I’ve been buying seems to be a little heavier on the cinnamon and ginger. It’s fairly balanced with the other spices, but I usually add additional cumin and ginger to the dishes I cook.
