In the 70's there was Fender / Gibson / Martin and everything else and alot of the "everything else" was basically unplayable by Gibson standards.
There are pros & cons to having 23 billion guitars on the planet.
I can tell you the Craigslists of the world are choking on $300 epis & squires which folks are trying to sell for $1300 cuz they "saw it on Reverb".

I think it's just the shapes the greater public associates with electric guitars..

Violins, banjos, flutes and trombones all look pretty much the same... are they stuck in the past?

Yes and no would be my answer.
In rock far more modern designs are played than in other styles.
There are also fashion brands that go for looks over everything else Nova for example.
The rock stuff tends to be far more functional and actually improve things.
