Sure. I always have a kind of backup with me. But with a computer based system, you defenitely want to see what's going on after booting. Even if you have everything starting automatically, there's plenty of things that all of a sudden could be different than the last time. At least that's my experience under both Windows and macOS.
Personally, if I was to build any such a setup, I'd defenitely always have a small monitor and some input device with me. But then, these days I'd very likely go for the smallest Macbook Air anyway (which would be more than sufficient for this use case), as it comes with monitor, keyboard and trackpad, can be operated with the lid closed and doesn't care in case the power is going down for whatever reasons. You can get M1 MBAs for as low as €500-600 2nd hand, add another €100 or so and you'll get a refurbished one with warranty.
