Mushroom and Swiss is delicious. Unfortunately



I just started doing a diet change as well. Been going on for about a month now. Fresh fruits, veggies, greens, lean meats and fish, nuts, yogurt, crumbly style cheeses, eggs, etc. All the good stuff and none of the processed sugars, sodas, fast food, seed oils. Just the occasional olive oil and pure butter.I think I mentioned somewhere back within the 36 pages of this thread how I was going to try to switch to a whole-food, plant-based diet, and how I'm absolutely convinced of the health benefits. However, I slacked off since then, but reaffirmed my desire to stick to it, and started this past Monday. All week it was fruits and veggies, except last night I needed to go grocery shopping, didn't feel like it, so I caved to my craving for a Hardees Mushroom & Swiss burger, and my carpal tunnel flared up again today.
Not claiming a direct connection, but it hadn't bothered me all week. I just got back from the store and made myself a big bowl of berries parfait. It's gonna take some getting used to, but hopefully I'll end up with a handful of new recipes that I like, and will find that that's enough. We shall see...

That looks tasty. I've never really charred romaine at home, maybe I'll do that tonight. Do some tuna fillets, sweet potatoes. My niece gave me some sweet basil so going to make a greek yogurt, curry and basil based sauce to top the fillets with. Should be interesting!I did make something reasonably healthy last night though.

Here's what I made tonight. Local market had some flounder so grabbed that instead of using my tuna. White yams mashed with roasted garlic, cilantro, seasoning and coconut milk, and bit of parmesan cheese. Charred romaine with olive oil and parmesan. Green sauce is mango/sweet basil/curry with yogurt and coconut milk. Fairly simple and turned out well!Do it, it's goodlittle squeeze of lemon or lime on top is also good.
