I think if one can afford it, they should try and keep both options.
Single pedals (specially Boss-sized) are usually easy to tweak live, have more character and are less picky about power.
Multi effects give you many options. They are versatile. You don't have to worry about patch cables.
If one has a huge board, they could consider downsizing:
1. Is the amp's footswitch adequate for your sounds?
2. Will your amp's overdriven sounds be enough for the songs you play?
3. Will you use a volume pedal with your amp?
4. Will you cleanup with volume knob?
5. Will you use a couple of dirt pedals into a clean amp? It will give you 3 types of sounds
6. Does the amp have reverb? Do you intend to leave it on when you play or it makes your sound disappear?
7. Do you use a delay pedal? Do you place it after your dirt pedals or in the effects loop?
8. Do you intend to use modulation? Will something like a simple CH-1 or Phase 90 be enough?
9. Will you use a wah or a looper? You will have to place it in the signal chain accordingly.
Configuring single effects pedals to suit your usage or a multi effects is upto you.
If you use few single effect pedals, you can take a pic of 2-3 different settings for every pedal on your phone, and tweak them as you play. Some people glue strips of paper to the board, so that you don't have to deface the pedal by marking it.
You and most people know these things, but if one is used to multi effects for decades, they forget the way they used single effect pedals in the past.
