For playing in, my favourite is guitar/bass/drums/singer, as long as it's a really great singer. I love just playing guitar, singing harmonies and not having to sing lead, and getting excited/inspired by a singer that can really kill it.
That being said, I have played/sang lead in a trio for the past 12 years, as it's just simpler and I haven't had a great singer available. You do work a lot harder, musically/vocally, but organizing gigs, etc, is much easier, and there's less splitting of pay required. But I do miss just laying back and focusing on guitar and enjoying someone who can really bring it on vocals.
For listening, I pretty much like all formats, if the songs and playing are solid.
