I was almost only using Plexi or modded Marshall models so I started to wonder whether I even need the Axe-Fx 3.Best sounding Plexi models available. By far.

Use your guitar volume and tone knobs! Those big bright caps have just the right amount of bite if you do that.Totally agree with what @Mongillo19 said above, but one other suggestion I would make:
Old Plexi’s are notorious for using whatever bright cap value they happened to find in the shop, bright cap values are all over the map. It was also a very common mod to swap bright cap values, or even remove the bright cap entirely.
The Fractal models use a relatively high bright cap value by default. It’s worth playing around with that value a bit and see if there are different values you like better. Generally, the lower the value the more full and round the tone will be, the higher the headroom will be, and the less sizzle you’ll get.
Other than that, just treat them like you would a real Plexi and they respond the same way
