I fear breaking the hi e and g on my acoustic. I'm still scared of tuning them sometimes. Do you get goosebumps from tuning? I was nervous of tuning the hi e for sometime.

But I've heard this before regarding the dominant hand picking. Closely related to the fact that drummers cross hands in order to drive the hi-hat with their dominant hand.

The hihat comparison is absolutely valid.
Thing is, what happens in your picking hand better needs to be on auto-pilot (with the exception of dedicated picking exercises). The picking hand should automatically follow the fingering hand, the latter being the one you rather concentrate on while playing. And nothing is better suited to do an automated job than your strong hand.
Try to tap a medium to fast kinda syncopated rhythm with your right hand (such as continuous 16ths with every third 16th accented, maybe at 70 BPM). Your strong hand will easily be able to do so, it'll possibly even be able to continue doing so when you talk or watch the news or whatever. Now try the same with your weak hand.
I also think that hitting the strings with a very certain amount of power is a pretty delicate task, whereas the left hand can pretty much ignore all dynamics.
Etc.

As said, there might be exceptions from this, but usually your strong hand is better at picking.
 
Is it possible to predict when a string will break? What are warning signs that a string is about to snap?
Don't how how close it is, but when you can hear weird overtones within a single note, it doesn't have too much longer. And when the tuner can't lock onto the pitch is also a good indicator, (and probably a result of those overtones.)
 
I think we are underestimating how strong strings are
Who's "we"? I don't give string strength any thought.

But you might want to give some thought to how much string tension a bridge on an acoustic guitar, or the top itself, can withstand when you go cranking on the strings.

The entire exercise is plain foolish.
