Part of the reason that capturing my own amp has been good for me. I’ll dial in a tone on my amp and capture it, then I tend to want to use my own captures because it’s “using my amp” and I don’t tweak the capture like I would a model.

I'm like that too and I think many people are like that.
You'll hit the next stage of enlightenment where you just track stuff WET and have no ability to tweak anything until the actual mix stage.
Dont worry, the next next stage of enlightenment is then going back to DI's/Plugins
Then the next next next stage of enlightenment is going back to WET only.
At some point you'll track DRY/WET thinking you've cracked the ultimate combo, but you'll ditch that after a while as well.
At this stage I just go with the flow, it all works. If I can play a riff once I can play it again in 2 seconds, can re-track under a different set of circumstances in no time.
