TBH; the concept of "you're using too much gain" has ruined me in the forum age because I've spent all that time fighting my guitar more than just playing the dang thing

Incredibly subjective, but I can point you to multiple releases and YouTube live set if you’d like me to provide evidence that I do in fact play the guitar. So far from your argument and lack of evidence I can only assume you just make out with your Quad Cortex.

As a former QC owner and current TMP owner, the touchscreen does make the unit more fun and intuitive to use for most things.

Both, yes. I love the QC as a desktop audio interface, guitar processor, command center type deal. I considered FM3 to replace my other QC, which I use on the floor in a more conventional way, but the FM3 was a bit over complicated and distracting, and “serving two masters” in order to keep my bearings with both was just a PITA. (FM3 sounded amazing, though.)

Indeed I don’t use super high gain….it stops at “appropriate for rock”.
Ime you can get any unit to hiss when you feed the tiniest amount of hiss into high gain stuff..add a decent amount of compression in front ..and the hiss party becomes even bigger

I agree, but you can always make comparisons “all else being equal”, and here I suspect the QC is a bit noisier. I think this is an inevitable consequence of miniaturization/ small footprint.
