Gotoh shows these posts as 11.3mm, any idea what size would be safe for this?

Blown away how little actual info there is in google

11mm, use a pillar drill and a dowel bit. Test on scrap. That should give you an interference fit. You should always slightly countersink the hole to prevent surface damage when pressing in the bushings .Sometimes on hardwood you may need to get closer to the bushings size or it may be too tight. It really depends on how precise you are with your drill press and how sharp the bit . Always test because I have seen it range from loose to too tight with an 11mm down to the setup and wood.
Oh and make sure you set a depth stop and your drill press can be used to press in the bushings smoothly and straight. Just use a piece of m8 studding to hold the bushings in the chuck.

In fairness that is everything you need.
From Gotoh's standpoint, I'd agree.

But..., for purposes of setting up correctly, wouldn't you need to know exactly how to position the guitar, so you'd drill the holes at the correct angle?

Iow, are those holes 90 degrees to the back of the guitar, in both axes? Assuming you'd simply place the guitar flat on the base of the drill press?

These are general lutherie issues not really the concern of Gotoh . Bushings are usually perpendicular to the body even if there is an angled neck.
