Those flutters..., the high notes that would ascend..., sounded like you increased the 'mix' of some of them as you were playing.
Or is it just the way the effects were set?

Just the way it was set. It's all about dynamics. If you pick harder they come out louder and if you play softer they come out quieter etc. etc.
