Grilled onions, bacon and thin tomato slices. American cheese.

This is pretty much the ultimate grilled cheese for me and was a hangover staple, along with a bowl of tomato bisque, for a few years.

Sometimes I think the ultimate Grilled Cheese is a Kraft Single in between
2 pieces of cheap-ass White Bread, slathered with craptastic Margarine like
dumb-ass Country Crock.

Exactly this. It's tough to beat that.
I've tried it every which way imaginable and the simplest is often the best.

You are right. Sometimes the 30 minute prep Grilled Cheese is just a bit pretentious
and trying way too hard.

Grilled cheese for me is mature cheddar, lots of cracked black pepper, real butter, half decent bread and lashings of Tabasco sauce (another thing I have to buy in giant bottles )

On cheese in general favourites of mine are

Stilton (got to be Hartington, a few miles up the road from me which is lucky)

Roquefort

Brie including blue

Baked camembert with rosemary and garlic

Black bomber cheddar

Goats cheese both hard and soft

Stinking Bishop. Not for everyone this one, smells like rotting corpse by all accounts but cannot confirm this due to not having smelt one.

Grilled cheese: Decent bread, real butter, a healthy layer of gruyere and apricot jam.

Or standard bread, a couple slices of a semi decent American cheese, and real butter. Definitely needs real butter.

Mayo works great, too. Basically anything with an higher Fat content.

I am on a big Feta kick right now. Crumbled Feta on Salads with lots of Tomato.
