Many analog synths have instrument in jacks which allow guitars to plug into a patch point just after synths oscillators. This gives the guitar access to the filters, amps, envelopes and anything downstream of the osc. For the Moog Matriarch for example that includes a stereo delay.
The most famous example was done by Pete Townshend on the Who's, "who are you" plugging his guitar into the Arp 2600. That synth has been reissued by Korg which now owns the Arp name. I found this example on how to patch that synth for that effect.
