And even though it's theoretically easier to economy pick across the 3 top strings to get that single note on the B w/o having to switch your pick slant, I can play it much faster just sticking with alt-picking.

Same. I never mastered sweep picking, or "economy picking" if you want to call it that by doing adjacent "down down" picks, etc. I'm strictly alternate picking and now too old to try to master anything different, LOL.
