How do you feel restringing

Hmm, I usually feel ok because I try to imagine how good it'll sound when I'm finished restringing. I'm more focused on the tone rather than the structure of the string.

I like restringing my (electric) guitars. Is the moment when I take care of them, clean them up and look at them from a different perspective.
Sometimes a B or E string sting one of my fingers an I curse but it's ok, not a big deal.

I don't have too many guitars but I keep a google sheets log that automatically count the days since last restrung.

I know what you mean, I’ve had it happen a few times. My mandolin terrifies me when I’m restringing it

A few years ago I bought a cheap mandolin because my oldest daughter was taking violin lessons and wanted to help her and do something together. I choosed a mandolin because it is tuned like a violin and was cool to have one.

First time I tuned it it scared me, I couldn't believe how tense those strings were.
After about a year the neck snapped....I knew it was a cheap one but jeeez I didn't expect it to be that cheap. LOL

I generally like to sit on the couch and take my time cleaning, inspecting etc. while restringing. It has been a long time since I screwed up a restring and broke a string, but I have definitely stabbed myself a few times.
